Making Pasta From Scratch

     Does your family enjoy a nice dish of pasta every week? If so then you're not much different than my family. Each and every week on Sunday my family has a great big feast consisting of a lovely pasta dish with a nice red sauce to go along with it. You can't have a red sauce without some meatballs to go with it. My mother's meatball recipe is fantastic and is fabulous with her red sauce. To go along with the pasta, sauce, and meatballs comes other sides such as a bread of some sort, usually garlic bread. Garlic bread is a family favorite at my household, as I would imagine it is in many households throughout the world. With every meal you must have some greens. By greens I mean vegetables. With every Sunday feast we have, comes a nice salad to go along with it. You can't just eat a big dish of pasta without having some vegetables to go with it.

     I look forward to Sunday's because I simply love a nice dish of pasta. I come from an Italian background and grew up eating pasta my whole life. It wasn't until about three months ago that I decided to try and make my own homemade pasta. What do I mean by that? Well making pasta is fun and all but it's pretty simple if you ask me. Boil some water, throw the noodles in and let them cook for a few minutes until the noodles are soft and ready to eat. Other than that you can heat some pre-bought sauce up in a sauce pan on low-medium for a bit to get it hot for the noodles. To me that's boring. What I decided I wanted to do was to make my own noodles, and sauce from scratch. To do this a few things were needed. The most important thing that was needed, which was the most unlikely thing for me to have, was a pasta machine. Pasta machines are used to flatten out your dough and also cut your dough into your desired noodle shape. Finding a pasta machine was my next problem, so I started with my family. Conveniently the first person I asked who happened to be my mother, had a pasta machine packed away in the basement. The best part about her pasta machine was the fact that she actually had a quality, well known pasta machine. My mother's machine was called the Atlas 150 Pasta Machine, which you can see in the image below.

     
Atlas is a well-known Italian company that creates pasta products. When it comes to a solid pasta machine, the atlas 150 is at the top of its game. So I decided to go ahead and make some homemade pasta on my own but had no idea what I was doing. Luckily my grandma was over and had been doing this for years. She told me when she use to make it back in the old country that they didn't even have these machines to help them. What they would do is simply take a dough roller and roll out the dough as thin as they could get it, and then they would cut it into their desired shapes. I said the heck with that! I'm going to use this machine because it looks a heck of a lot easier. After my grandma walked me through making the dough, which was an overall pretty easy task, I then went on and Googled how to make homemade pasta with a pasta machine. After about an hour of screwing around with the machine and some dough I quickly made to practice with, I then went on to begin my first homemade pasta noodle operation.

To start I made my dough again. This time around I made a lot more, and it was easier to work with then the first time around. I used about 3 eggs, 2 tsp. of olive oil, and 2 cups of flour. I put all my ingredients into a mixing bowl and mixed them together until my dough was just the right texture. My grandma told me that you're looking for the dough to hold together, but not to work the dough too much because it will gain moisture in the next step.

   After creating the dough, I then wrapped it in saran wrap, and put it in the refrigerator for 30 minutes. Once the 30 minutes was up I grabbed my dough and realized it had indeed gained moisture like my grandma had said. Now its time to flatten our dough out. I grabbed a good size piece of dough about the size of an apple to work with. I then flatted it out as good as I could so it could fit into the pasta machine. Remember to have your pasta machine set to the lowest setting when starting off. The lowest setting is usually the widest setting on the machine. You want to start feeding your dough through the widest setting, then work your way down to the thinnest gradually. I was taught to start with the first setting, and do every other setting until I'm done, repeating each setting twice. 

So to get a better idea of what I'm saying, the Atlas 150 Pasta Machines have 6 settings. I would start by feeding my dough through the first setting twice, then move on to the 3rd setting, and feed the dough through this setting twice, then I would feed my dough through the 5th setting twice, and since there's only 6 settings, I would finish off by feeding my dough through the 6th setting twice.

So the break down would be:

1st setting twice. 3rd setting twice. 5th setting twice. 6th setting twice.

You want to make sure that the dough is being fed through the machine evenly, a detailed picture is shown to the left. The machine offers 5 inches of space to run your dough through, and you want to use every inch you've got. 

Once all your dough is rolled out and flattened, you then want to move on to your pasta attachment. Once your attachment is chosen, hook it up to the end of the pasta machine, it should slide on easily. After switching the crank handle from the machine over to the attachment, take one of your flattened pieces of dough and feed it through the attachment. As you can see to the left, you want to have a set of hands to receive the pasta so it doesn't clump up and get messy.

Repeat this step for all your flattened dough, and set all your pasta aside to dry. If you want to cook your pasta fresh, simply boil the noodles for 3-4 minutes. Remember cooking time for fresh noodles is significantly less.

Tips To Putting Pasta Through A Pasta Machine

When making your own pasta there are a few tips everyone should know before hand to make their experience a smooth one. 


1. When putting your dough through your pasta machine make sure the dough is fitted as best as it can be inside your pasta machine. Notice in the image to the left our dough is a nice rectangular shape, and fits inside the 5 inch space provided on the pasta machine







2. When rolling your flattened dough through the attachment of your choice, have someone else there ready to except the dough. Skipping this step could cause your dough to build up under the machine and possibly rip, or stick together. This is an important step if you want your pasta to look nice and clean.

Nothing Like A Good Pasta Cookbook

There are thousands of ways to cook a dish of pasta and everyone has their favorite dish. When it comes to pasta choosing the right dish to make can be tough. I have a pasta cookbooks that offers a ton of fantastic ideas. The book I've been looking into lately is called "The Essential Pasta Cookbook". I like this book a lot and it has a lot to offer in the world of pasta.

Some pasta cookbooks offer simply recipes and recipes only, but some of the good ones offer tutorials and other great instructions on how to do lots of things related to pasta. Making a dish of pasta is one thing, but making your own pasta noodles, and your own sauce, and everything that goes with it is a whole different story. Making homemade pasta is a super fun project and every once in a while it's a fantastic project whether you do it with your family or friends.

 Using a Pasta Machine is really fun and is a super cool thing to learn how to do.There are many Pasta machines out there but many of them are low quality, and cheap. When it comes to a good, quality pasta machine, Atlas is what your looking for.

Making Homemade Alfredo Sauce

How to make alfredo sauce


For this recipe tutorial I'll show you how to make homemade alfredo sauce. Making homemade alfedo sauce is a great experience. Pasta can be served hundreds of ways, but alfredo sauce is one of my personal favorites. Enjoy!

 

What you'll need:

     Sauce Pan                                Blender             Cream Cheese                   

               

  Parmesan Cheese         Garlic Cloves           Milk 0-2%        Onions          Black Pepper                   

 


  • 1 cup milk
  • 1/2 cup cream cheese
  • 3 tablespoons of parmesan cheese
  • 1/2 teaspoon salt
  • 1 clove garlic
  • 1/2 teaspoon black pepper
  • 3 tablespoons dry parsley
  • Small piece of white onion (about an 1/8 of a full onion)

 

 

Step 1:  Mix all ingredients in a blender.

Step 2: After your mix is blended well, pour your mixture into the sauce pan.

Step 3: Heat your sauce in the pan on a medium temperature until you reach a simmer.

Step 4: Make sure to stir your sauce every minute or so.

Step 5: Heat at a simmer for about 10-15 minutes.


For fresh homemade pasta, consider a pasta machines.

Step 6: Pour over your freshly prepared pasta.

Our Weekly Pasta Dinner

The dinner table can be one of the best places to bring your family together. Eating a nice home cooked meal with your whole family is a wonderful experience, and can bring great discussion, or humor to everyone attending. My family has a wonderful pasta dinner every Sunday night. My mother spends all day preparing her sauce, meatballs, and whatever else it takes to create her masterpiece. After hours of preparing it's finally done. The family gathers at the dinner table and begins the feast. On Sundays we always sit at the dinner table. Your asking, where else would you sit? Well, during the week we have an island counter top which we eat our meals at. The island is simply more convenient, and easy to use for my mother when she's cooking. For our Sunday feast, we always set the dinner table, and sit at the table together to eat our meal. 

I look forward to every Sunday for a number of reasons. The main reason being I love to eat, and I love to eat pasta more than anything. We are an Italian family and we all enjoy a fabulous pasta dinner every week. Besides the eating part of our feast, I enjoy joining my family and starting conversation. It's not often you get to sit down with your whole family at once for an extended period of time. Being able to talk to my all my brothers at once is pretty cool. I got three brothers, and having them all there at once can be quite exciting. Asking one brother one thing can lead to a fun conversation, or sometimes a ruthless argument. Overall it's a fun experience and you get to learn a lot about your siblings, and/or parents. 

My brothers all attend school, and two of them work full time jobs, theres just no time to spend time with them. Having a weekly dinner is a very exciting aspect of our family. No matter what is happening that week, I know that the upcoming Sunday I will see my whole family whether it's at our dinner table, or simply out to eat at one of our favorite restaurants. Not everyone can make it every Sunday, but that's understandable and we forgive them. Most Sunday's we have the whole family attending, including my grandma, who I feel is the most important person at the dinner table. 

My grandma, who we call "nuni" or "nonna" which is Italian for grandmother. Our nonna came over from Italy over 50 years ago on a boat, and has never been the same since. I love talking to her at the dinner table about the old times in the old country. She teaches us some cool things about cooking, and just being Italian in general. Sometimes my nunna will teach us some Italian phrases, or secrets to different things that she's learned over in Italy. I love comparing her different ways to go about doing certain things to the way we do certain things over here in America, it's very interesting. 

One of the coolest things I've learned from my grandmother is how to make homemade pasta. My grandmother grew up in a village in Sicily, and was taught to produce her own pasta noodles when it came to their family feasts. Learning how to make my own homemade pasta was easily one of the coolest things I've learned from here. I currently attend the University of New Hampshire for Culinary Arts, and cooking happens to be my passion. Having my grandma around is so awesome, and I learn a lot from her every day. She taught me the basics of using a Pasta Machine, and how to make my own pasta from scratch. After a few hours of preparing our noodles, our product was done. I had produced enough pasta for weeks! We ate the homemade pasta later that night and it was fantastic. May not taste like it was store bought, but it definitely tastes homemade, and delicious. 

The moral of the article is to make more people aware of the power of food, whether your preparing it or eating it. Take advantage of your family dinners, who knows how much longer you'll have with them. Whether you sit and enjoy the presence, or strike a conversation with your family members, a family dinner is a great way to gather the family each week.

Sunday Pasta Dinners

My family and I enjoy eating pasta at least once a week. Every Sunday my mother prepares this great big pasta dinner for my whole family. I look forward to Sunday's because I love her pasta recipe, and everything that goes along with it. She makes her own sauce which takes her what seems like all day to make. And to go with it she makes her own meatballs. Add some garlic bread and some Parmesan cheese and you've got yourself a fantastic meal. Sometimes if we're lucky she'll cook up some zucchini or eggplant to put on top.

The coolest thing about our Sunday pasta dinners is the fact my mom makes her own homemade pasta to go with it. Well you need to know how to make homemade pasta to do something like that now don't you! Well it's pretty simple when it comes down to it. My grandmother is also an awesome cook and loves to cook with my mother each week. I currently go to school for culinary arts and its fun to cook with my mom and grandma. Using our pasta machine is a lot of fun, and eating the final product is very exciting as well. If you're family likes to have pasta dinners once a week, or even every once in a while, you should try and make your own pasta. Making your own pasta is a fantastic family project, and can be fun for all.

Hmmm, Black Pasta?

I've heard of red pasta, and green pasta, but I've never heard of black pasta. When it comes to cooking anything is possible. I recently learned how to cook red, green, or purple pasta noodles, which was super cool to learn. Today I was in my cooking class and one of my classmates was telling me about how she had eaten a pasta with black sauce. I was wondering how this was possible. She went on to explain that black pasta noodles, or a black pasta sauce, comes from Squid Ink. Squid ink is perfectly healthy, and good to eat, and can be used to cook into things to create various colors.

Cooking with squid ink can be kind of cool. People usually don't see black pastas, or black sauces. Bringing a dish like this in front of a group of friends can be an experience for everyone. My classmate said it didn't taste to much like seafood at all, which is good because I don't like sea food too much. So if your not a sea food person ether, than not to worry.

If your trying to make pasta from scratch, then you might need a Pasta Machine. These machines are fantastic for family projects. Gather your family and create some fresh homemade pasta. And if your feeling ambitious, go out and get some squid ink and make it black pasta! Pasta machines come in all shapes, sizes, and brands. Making Pasta: Fantastic Family Project.

Does you family love to cook? Cooking can be a fantastic way to bring the family together, and create a delicious meal for everyone. My family is from Italy and we love to eat pasta. When it comes to pasta, nothing beats a nice homemade pasta. Bringing the family together has never been more fun. Making pasta with the family can be a fabulous project for everyone. Nothing beats making fresh, homemade pasta with your family, and then eating it the same night for dinner. 

My family uses an Imperia Pasta Machine to make our pasta. The original Imperia pasta machine is a fantastic, quality pasta machine made in Italy.

Using A Pasta Machine

There are many different types of pasta machines, and they all work in the same basic way. 

Take your dough and portion it off into fist size pieces. With a dough roller, smoothen your dough out into a thin rectangular shape so it fits through your pasta machine.  

Once you have a thin enough dough to fit through your thickest setting on your machine, insert your dough and begin cranking the lever. Once your dough comes out the other side, you'll notice its smooth, and thinner than when it started. You then want to feed the dough back through the pasta machine on the next thinner setting, and repeat until the dough is fed through all the settings. Most people like to stop on the second to last settings depending on the pasta machine. 

Once you have your rectangular strips of dough from the first portion, set those aside an begin on your next portion of dough. Repeat the above steps with every piece or portioned dough until finished. 

Let the dough sit for about 15 minutes before you feed it through your desired pasta attachment. Once you've chosen a pasta attachment, feed each piece of dough individually through the attachment. With your hand behind, except the dough so it doesn't get all bunched up in a pile and loose structure. 

Repeat the above steps for all the dough you've created. You can cook the pasta right away, or set the dough aside to dry over night to obtain dry pasta. 


When working with a pasta machine, nothing beats a nice solid, quality machine like an Imperia Pasta Machine.

How To Make Homemade Gnocchi

Below I will provide a step by step tutorial on how to make homemade Gnocchi. Gnocchi is a delicious dumpling type pasta made from a basic flour, egg, and potatoe dough. Gnocchi can be made with many kinds of sauces, but here at LetsEatPasta, we prefer a nice italian tomato sauce. 

 

What you'll need.


                 Oil                                Eggs                                            Flour                               

      

      Mixing Bowl                      Potatoes                            Saran Wrap  

     

 


For this Gnocchi tutorial, you will need: 

2 or so pouds of potatoes (about 5 large), unpeeled

1-1/2 cups all-purpose flour

2 egg yolks

1 tablespoon extra-virgin olive oil

 

Step 1: Boil your unpeeled potatoes for about 30-40 minutes, then let sit and cool for abotu 10-15 minutes.

Step 2: Once cool enough to handle, mash your potatoes. Using a potato ricer makes this step a bit easier, but it can be done without. You want to make sure to get out as many lumps as possible in your mashed potato mix.

 

 

 

 

 

 



 

Step 3: In one bowl, mix your egg yokes and mashed potatoes together.

Step 4: Slowly add your flour into the mixture until all flour is added. 

Step 5: Once you've got a workable dough, move it to a clean, lightly floured surface.

 

 

 

 

 

 

 

 

 

 

 

 

Step 6: With both hands, press into the center of the dough and fold it inside of itself. Repeat this for about 1-2 minutes, or until dough feels soft and smooth.

Step 7: On your floured surface, tear off a piece of dough about the size of an apple, and put the rest aside.

Step 8: Roll out the dough into a long rope that's about 3/4" thick in diameter. 

 

 

 

 

 

 

 


 

 

Step 9: With a knife, cut the dough at every 3/4" or so. Make sure each little piece of dough is about the same size as one another. 

Step 10: Repeat steps 7, 8, and 9 until all dough is used. 

 

 

 

 

 

 

 

 

Step 11: From here you can do one of two things. You can leave them as is, or you can use a Gnocchi board or a fork to indent them.

 

 

 

 

 

 

 

 

 

 

Explaining how to apply the indent the Gnocchi can be dificult in words, view the video below for a simple tutorial on how to do this step.


Step 12: Bring a pot of water to a boil and add 10-15 Gnocchi. Once the Gnocchi rise to the surface of the water, they are done.

Step 13: Put Gnocchi in a bowl and cover with saran wrap to keep warm.

Step 14: Repeat steps 12 and 13 until all Gnocchi are cooked.

Step 15: Add to your desired sauce, or eat plain with butter.

Making Different Colored Pastas

Growing up I always loved eating the different colored noodles. But I never actually new how they were different colors! Yesterday I was making some homemade pasta with my new pasta machine, and I came across a recipe online that talked about making green and red pasta and I was super interested. I began reading the recipe and soon learned that it wasn't too difficult to create these noodles. 

For the red noodles, you simply add a tomato paste to the flour mixture when creating the dough for the noodles. Once the dough is made, it should be red in color, and you then go about making your noodles like you normally would with the pasta maker

Same goes for the green noodles, except your going to use spinach. I'm sure you could use a handful of different green vegetables, but in this particular recipe, they use spinach. Like the red noodles, you simply add the spinach to the mixture, and create a green dough. Before you add the spinach, you must puree it in a mixer to get more of a liquid spinach to add to the four mixture. Like above, once you add the mixture and mix them good, you should have a green dough to work with. From their you go about your business like you normally would making pasta with normal dough. 

I love making fresh homemade pasta, and I feel everyone who enjoys cooking should give it a shot.

Dug Out The Spaghetti Maker

When it comes to making homemade pasta, having a quality pasta machine is ideal. Having a nice solid, sturdy machine is always better when in the process of making homemade pasta. Making homemade pasta is an awesome family project, and every family should try it at some point. Today my grandma and I made homemade pasta at my house. It was my first time ever making homemade pasta, and I had a lot to learn. 

My grandma new everything like the back of her palm. She use to live in Italy, and has a knack for cooking pasta. Once the dough was made and ready to go, we fed it through our pasta machine and made real thin, long strips of dough to prepare for the cutting stage. Once all the dough was thinned out and ready for cutting, we let it dry. 

After about 20 minutes of drying, the dough was ready to be cut. We fed the dough through the spaghetti attachment that my mom has, and out came spaghetti! It was so cool watching it. As you cranked the machine, the thin dough on one side was pouring out the other side as spaghetti!

I have to admit, I'm super excited my mom had this pasta machine hidden away in the basement all these years. I went down last night and dug it out of the closet and It's gonna be in my kitchen for now on!

I think I'm going to start making homemade pasta more often, and try with new recipes, and different types of pasta. If you love pasta like I do, then I suggest getting yourself a nice pasta maker and try making pasta from scratch. It's a very fun kitchen project to do with the family, and the best part is eating it when your done!

Lets Make Pasta!

      Once in a while it's always great to make your own homemade pasta. Although it's much easier to go to your local supermarket and grab some pasta, making your own is a fantastic experience. Making pasta can be a pain, but once you understand how to do it, and got it down to a science, it's wonderful. Once a month on a sunday, my mother and I dig the Pasta Machine out from the basement.  Once the kitchen is all set up and ready to go, we begin the day making our pasta. 

      Most of the time the pasta comes out pretty darn good. But sometimes it doesn't come out as good as other times. Thats the risk of creating your own homemade pasta! But the fact is that your trying, and your making your own pasta. It's cool to say you made your own pasta, and even more cool when it comes out really really good. 

      My family usually makes the call on how good it is. Although my mother and I know right off the bat whether it's going to be good or not, we still leave it to them. Cause hey, it doesn't matter what you think, it matters what who your serving thinks! Right?

     Next time you have a chance, grab a nice pasta machine and make some homemade pasta. Not only is it a fun project, but a fun experience as well. Learn how they use to do it back in Italy in the old country. Pasta makers are fantastic machines, and I feel every family who eats pasta on a regular basis should have one to use every one in a while

Enjoy A Nice Homemade Italian Pasta Dinner

Nothing beats a nice Homemade Italian Pasta Dinner. But when it comes to making a nice homemade pasta, you need a nice pasta machine. The good pasta machines are usually made out of Italy, and built to last for a lifetime. My mother has this really good pasta maker that she ordered offline not to long ago. Every sunday we make our own pasta with the machine, and then make our own homemade sauce to go along with it. 

Our family looks forward to sundays for this special occasion we have. Making homemade pasta brings our family together for a fantastic dinner once a week, which is a fabulous thing to have. 

When it comes to making your own pasta, like stated above, you must have a descent pasta maker. Don't get a pasta machine that isn't built to last. These machines take a beating, and should be able to last you forever. I know my grandmothers had hers since she moved to America 50 years ago. Now thats a quality Pasta Machine! 

Every holiday she makes her famous homemade pasta and homemade pasta sauce. It's absolutely to die for! I cannot wait till I get my own place and I can buy my own quality pasta maker for my kitchen. Just like our household now, my household will also have sunday homemade pasta days. It's just a nice way to gather the family and have a nice evening together.

Our Famous Italian Sauce/Pasta Recipe!

Italian Pasta Recipe:

Ingredients:

2 cans of Pastene kitchen ready tomato sauce

3 cloves of garlic (sliced)

1/2 onion (chopped)

4 tablespoons of olive oil

2 bay leaves

1 teaspoon of salt and pepper

1 teaspoon of basil

1 teaspoon parsley

2 tablespoons of parmesan cheese 

 

Directions:

1) Sautee oil, garlic, and onions in a pan until softened.

 

2) Add the rest of the ingredients and simmer for about 1.5 hours.

 

3) Boil the needed amount of water for how much noodles your cooking, and add the noodles. 

 

4) Once the noodles are done, add sauce to noodles, or serve separately. 

 

5) Enjoy!
